  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup fresh blueberries (plus extra for topping)
  • 8 oz cream cheese, softened

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish with nonstick spray.
  2. In a bowl, combine flour, sugar, baking powder, and salt.
  3. In another bowl, beat the butter and sugar until fluffy. Add eggs one at a time and then mix in the sour cream.
  4. Gradually combine the dry ingredients into the wet mixture until just mixed.
  5. For the filling, blend cream cheese with sugar until smooth; fold in half of the blueberries.
  6. Spread half of the batter in the prepared pan. Top with dollops of cream cheese mixture and sprinkle remaining blueberries. Layer the rest of the batter on top.
  7. Bake for 50-60 minutes or until golden brown and a toothpick comes out clean.
