- 9 lasagna noodles (no-boil recommended)
- 2 cups butternut squash (roasted)
- 6 slices thick-cut bacon
- 1/4 cup fresh sage (minced)
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 2 cups marinara sauce
Instructions
- Preheat oven to 400°F (200°C). Cut butternut squash in half, scoop out seeds, brush with olive oil, season with salt and pepper, and roast cut-side down for 30-35 minutes until tender.
- While the squash roasts, cook bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble.
- In a large bowl, mash the roasted butternut squash flesh. Mix in crumbled bacon, ricotta cheese, minced sage, and Parmesan to create a filling.
- Boil lasagna noodles according to package instructions until al dente; drain carefully.
- Spread marinara sauce on the bottom of a baking dish. Place filling at one end of each noodle and roll tightly; place seam-side down in the dish.
- Top rolls with more marinara and sprinkle with additional Parmesan. Cover with foil and bake for 20 minutes; remove foil and bake an additional 10 minutes until bubbly.
