  • 3 tbsp olive oil
  • 2 cups white or brown rice
  • 2 tbsp honey
  • Salt and pepper to taste

Instructions

  2. Cook the rice: Prepare rice according to package instructions.
  3. Sear the chicken: Heat olive oil in a skillet over medium-high heat. Sear marinated chicken for about 5 minutes on each side until golden brown.
  4. Finish cooking: Lower the heat, cover the skillet, and cook for another 8 minutes until chicken reaches an internal temperature of 165°F (75°C). Alternatively, bake at 400°F (200°C) covered with foil.
  5. Serve: Slice the chicken and serve it over rice, drizzling any remaining marinade on top.
