Ingredients

  • 1 cup quinoa (rinsed)
  • 1 medium cucumber (diced)
  • 1 cup cherry tomatoes (halved)
  • 1/2 red onion (finely chopped)
  • 1/2 cup Kalamata olives (pitted and sliced)
  • 1/3 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water to remove bitterness. Combine quinoa with 2 cups of water in a pot. Bring to a boil, then reduce heat and simmer for about 15 minutes until fluffy.
  2. While quinoa cooks, chop cucumber, halve cherry tomatoes, finely chop red onion, and prepare olives.
  3. Once quinoa has cooled slightly, mix it in a large bowl with chopped veggies.
  4. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  5. Pour dressing over the salad mixture and toss gently until well combined.
  6. Serve in bowls or plates; top with feta cheese if desired.
