- 1 cup quinoa (rinsed)
- 1 medium cucumber (diced)
- 1 cup cherry tomatoes (halved)
- 1/2 red onion (finely chopped)
- 1/2 cup Kalamata olives (pitted and sliced)

- 2 tablespoons fresh lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water to remove bitterness. Combine quinoa with 2 cups of water in a pot. Bring to a boil, then reduce heat and simmer for about 15 minutes until fluffy.
- While quinoa cooks, chop cucumber, halve cherry tomatoes, finely chop red onion, and prepare olives.
- Once quinoa has cooled slightly, mix it in a large bowl with chopped veggies.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Pour dressing over the salad mixture and toss gently until well combined.
- Serve in bowls or plates; top with feta cheese if desired.
