  • 3 cups mixed mushrooms (cremini and shiitake), sliced
  • 1 medium yellow onion, chopped
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  2. Stir in garlic and mushrooms; cook until mushrooms are golden brown.
