- 4 medium bell peppers (orange, yellow, or green)
- 1 lb ground beef or turkey
- 2 cups cooked rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup tomato sauce
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tsp cumin
- 2 tsp paprika
- 1 tsp garlic powder
- Salt & pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and lightly spray a baking dish with cooking spray.
- Slice the tops off the bell peppers and scoop out the seeds.
- In a skillet over medium heat, brown the ground beef or turkey for about 5-7 minutes; drain excess fat.
- Stir in the cooked rice, black beans, tomato sauce, cumin, paprika, garlic powder, salt, and pepper until well combined.
- Stuff each bell pepper generously with the filling and place them upright in the baking dish.
- Top each stuffed pepper with shredded cheese.
- Cover with foil and bake for 25 minutes; remove foil and bake for an additional 10 minutes until golden brown.
