Description

Transform your Halloween celebrations with these Spooky Bell Peppers! Bursting with vibrant colors, these edible ghouls are filled with a hearty mixture of ground beef, rice, and spices, then baked to perfection. Ingredients

  • 4 medium bell peppers (orange, yellow, or green)
  • 1 lb ground beef or turkey
  • 2 cups cooked rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup tomato sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tsp cumin
  • 2 tsp paprika
  • 1 tsp garlic powder
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with cooking spray.
  2. Slice the tops off the bell peppers and scoop out the seeds.
  3. In a skillet over medium heat, brown the ground beef or turkey for about 5-7 minutes; drain excess fat.
  4. Stir in the cooked rice, black beans, tomato sauce, cumin, paprika, garlic powder, salt, and pepper until well combined.
  5. Stuff each bell pepper generously with the filling and place them upright in the baking dish.
  6. Top each stuffed pepper with shredded cheese.
  7. Cover with foil and bake for 25 minutes; remove foil and bake for an additional 10 minutes until golden brown.
