Ingredients
- 4 medium bell peppers (orange or yellow)
- 3 cups cooked shredded boneless skinless chicken breasts
- 1 cup cooked white or brown rice
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup salsa
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 tsp cumin
- 1 tsp chili powder
- Fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
- In a pot, bring water to a simmer and cook chicken breasts for about 15-20 minutes until fully cooked; shred the chicken.
- In a mixing bowl, combine shredded chicken, rice, black beans, salsa, cumin, chili powder, and half of the cheese.
- Cut tops off bell peppers and remove seeds; fill each pepper generously with the mixture.
- Arrange stuffed peppers in the baking dish, cover with foil, and bake for 30 minutes. Remove foil for the last five minutes to melt cheese.
- Garnish with remaining cheese and fresh cilantro before serving.
