  • 3 large eggs
  • 1/2 cup diced bell peppers (any color)
  • 1/4 cup diced onion
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1/4 cup diced ham or bacon (optional)
  • 1 tsp olive oil

Instructions

  1. Dice bell peppers and onion; chop ham or bacon if using.
  2. In a bowl, whisk eggs with salt and pepper until blended.
  3. Heat olive oil in a nonstick skillet over medium heat. Sauté bell peppers and onions for about 5 minutes until tender.
  4. Pour the eggs into the skillet over the veggies. Cook undisturbed for 2 minutes until edges start to set.
  5. Sprinkle cheese on top and add ham or bacon if desired.
  6. Gently fold one side of the omelette over itself when mostly cooked but still slightly runny on top (about another minute). Cook for an additional minute until fully set.
