- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cups fresh mozzarella cheese, sliced
- 1 cup fresh basil leaves
- 2 cups tomato sauce (marinara or homemade)
- 9 lasagna noodles (traditional or no-boil)
- ½ cup grated Parmesan cheese
- 15 oz ricotta cheese
- 2 large eggs
- Salt and pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- Season chicken with salt and pepper. Cook in a skillet over medium heat for 6-7 minutes per side until cooked through. Let rest, then shred.
- In a bowl, mix ricotta cheese with eggs, half of the Parmesan, salt, and pepper until smooth.
- Layer the bottom of the baking dish with tomato sauce. Add noodles followed by shredded chicken, ricotta mixture, mozzarella slices, and basil. Repeat layers until all ingredients are used.
- Top with remaining noodles, sauce, mozzarella, and Parmesan.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until bubbly.
