  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups fresh mozzarella cheese, sliced
  • 1 cup fresh basil leaves
  • 2 cups tomato sauce (marinara or homemade)
  • 9 lasagna noodles (traditional or no-boil)
  • ½ cup grated Parmesan cheese
  • 15 oz ricotta cheese
  • 2 large eggs
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Season chicken with salt and pepper. Cook in a skillet over medium heat for 6-7 minutes per side until cooked through. Let rest, then shred.
  3. In a bowl, mix ricotta cheese with eggs, half of the Parmesan, salt, and pepper until smooth.
  4. Layer the bottom of the baking dish with tomato sauce. Add noodles followed by shredded chicken, ricotta mixture, mozzarella slices, and basil. Repeat layers until all ingredients are used.
  5. Top with remaining noodles, sauce, mozzarella, and Parmesan.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until bubbly.
