- 1 cup shredded cheddar cheese
- 1 cup bell peppers, chopped (any color)

- 1 cup zucchini, grated and squeezed dry
- 1/4 cup fresh cilantro, chopped (optional)
- 1 tsp ground cumin
- 1 tsp chili powder
- 2 tsp olive oil
- Sour cream or Greek yogurt for dipping
Instructions
- Prep your ingredients by chopping bell peppers, slicing red onion, and grating zucchini.
