  • 1/4 cup vegan butter
  • 1/2 cup blueberries (fresh or frozen)
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice
  • 1/4 tsp cinnamon
  • 2 tbsp non-dairy milk

Instructions

  1. 1. Make the Dough: In a bowl, mix flour and vegan butter until crumbly. Gradually add non-dairy milk until a dough forms. Chill for 30 minutes.
  2. 2. Prepare the Filling: Combine blueberries, sugar, lemon juice, and cinnamon in a separate bowl. Mash slightly if using fresh blueberries.
  3. 3. Roll Out the Dough: On a floured surface, roll out dough to about 1/8 inch thick and cut into ghost shapes.
  4. 4. Assemble the Hand Pies: Place filling on half of each shape, fold over, and seal edges with a fork.
  5. 5. Bake: Preheat oven to 375°F (190°C). Bake for about 20 minutes until golden brown.
  6. 6. Cool and Serve: Allow to cool slightly before serving. Dust with powdered sugar if desired.
