  • 2 lbs beef chuck roast, cut into chunks
  • 1 can (13.5 oz) full-fat coconut milk
  • 3 tbsp massaman curry paste
  • 2 medium potatoes, chopped
  • 1 large onion, chopped
  • ½ cup peanuts, roughly chopped
  • 2 tbsp brown sugar
  • 2 tbsp fish sauce

Instructions

  1. 1. Brown the beef in a large pot over medium-high heat until golden on all sides.
  2. 2. Remove the beef and sauté chopped onions in the same pot until translucent.
  3. 3. Stir in the massaman curry paste and cook for an additional minute.
  4. 4. Return the beef to the pot and add potatoes, coconut milk, brown sugar, fish sauce, and peanuts; mix well.
  5. 5. Bring to a gentle boil; reduce heat, cover, and let simmer for about 2 hours or until the beef is fork-tender.
  6. 6. Serve over rice or noodles, garnished with extra peanuts or fresh cilantro if desired.
