- 3 tbsp massaman curry paste
- 2 medium potatoes, chopped
- 1 large onion, chopped
- ½ cup peanuts, roughly chopped
- 2 tbsp brown sugar
- 2 tbsp fish sauce
Instructions
- 1. Brown the beef in a large pot over medium-high heat until golden on all sides.
- 2. Remove the beef and sauté chopped onions in the same pot until translucent.
- 3. Stir in the massaman curry paste and cook for an additional minute.
- 4. Return the beef to the pot and add potatoes, coconut milk, brown sugar, fish sauce, and peanuts; mix well.
- 5. Bring to a gentle boil; reduce heat, cover, and let simmer for about 2 hours or until the beef is fork-tender.
