- 2 large eggs, room temperature
- 1 tsp vanilla extract
- 1 tsp pumpkin spice blend
Instructions
- Preheat oven to 350°F (175°C). Line a 9×9-inch baking dish with parchment paper.
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press into the bottom of the prepared dish and bake for 10 minutes until golden.
- In another bowl, beat cream cheese until smooth. Gradually add sour cream, sugar, vanilla, and eggs one at a time, mixing well after each addition.
- Divide batter in half; stir pumpkin puree and pumpkin spice into one half.
- Pour plain cheesecake over crust, then alternate dollops of the pumpkin mixture on top. Swirl gently with a knife.
- Bake for 45-50 minutes until slightly jiggly in the center. Cool completely before refrigerating for at least four hours.
