Ingredients

Scale
  • 1 cup millet
  • 2 cups water
  • 2 cups fresh strawberries, quartered
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Juice of 1/2 lemon
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Rinse millet under cold water. In a medium saucepan, combine millet and water; bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes until all water is absorbed.
  2. While millet cooks, slice strawberries into quarters.
  3. In a small bowl, whisk together olive oil, honey, lemon juice, and thyme.
  4. Fluff cooked millet with a fork in a large bowl. Add sliced strawberries and drizzle with thyme dressing; gently mix.
  5. Taste and adjust sweetness or acidity if needed. Serve immediately on plates or in bowls garnished with extra thyme.
