  • 1 cup cucumber, sliced

  • 1/4 cup fresh cilantro or mint
  • 3 cloves garlic, minced
  • 1/4 cup lime juice (freshly squeezed)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey or agave syrup

Instructions

  1. Cook the rice noodles according to package instructions (about 4-6 minutes) until tender but slightly al dente. Drain and set aside.
  2. In a skillet over medium heat, cook your chosen protein until fully cooked (5-7 minutes).
  3. Slice the bell peppers, carrots, and cucumber into bite-sized pieces and mix them with the cooked protein.
  4. In a small bowl, whisk together the minced garlic, lime juice, soy sauce, and honey/agave syrup to make the sauce.
  5. Assemble the bowls by layering rice noodles at the bottom topped with the veggie-protein mix. Drizzle with sweet garlic lime sauce.
