  • 1 lb ground beef (lean)
  • 2 cups fresh spinach (chopped)
  • 3 cloves garlic (minced)
  • 1 cup breadcrumbs (plain or Italian-seasoned)
  • 1 large egg
  • 8 oz fresh mozzarella cheese (cubed)
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. 1. Preheat the oven to 400°F (200°C).
  2. 2. Sauté chopped spinach and minced garlic in a skillet over medium heat until wilted; let it cool.
  3. 3. In a large bowl, combine ground beef, cooked spinach, garlic, breadcrumbs, egg, Parmesan cheese, Italian seasoning, salt, and pepper. Mix well.
  4. 4. Take about two tablespoons of the mixture, flatten it in your hand, place a cube of mozzarella in the center, and roll it into a ball.
  5. 5. Place the meatballs on a parchment-lined baking sheet and bake for 20-25 minutes or until golden brown.
