  • 1 cup bell peppers, sliced (any color)
  • 1 cup carrots, julienned
  • 1/2 cup green onions, chopped
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Place cut-side down on a baking sheet lined with parchment paper.
  2. Roast the squash for 30-40 minutes until tender. Scrape out the strands with a fork.
  3. Meanwhile, heat oil in a skillet over medium-high heat. Sauté bell peppers, carrots, and green onions for about 5 minutes until crisp-tender.
  4. In a small bowl, mix soy sauce, sesame oil, and garlic. Set aside.
  5. Add the spaghetti squash strands to the skillet with veggies. Pour in the sauce and toss to combine; cook for an additional 2 minutes over low heat.
  6. Serve immediately garnished with extra green onions if desired.
