  • 4 medium yellow squash (sliced)
  • 1 medium onion (sliced)
  • 1 cup sharp cheddar cheese (shredded)
  • 2 large eggs
  • 1 cup plain breadcrumbs
  • 1 cup whole milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp butter (for sautéing)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish with nonstick cooking spray or butter.
  2. In a skillet, melt butter over medium heat. Sauté sliced squash and onion until tender, about 5-7 minutes.
  3. In a large bowl, combine the sautéed mixture with cheese, breadcrumbs, eggs, milk, salt, and pepper. Mix well.
  4. Pour the mixture into the greased baking dish and sprinkle additional cheese on top if desired.
  5. Bake for 30-35 minutes or until golden brown and bubbly.
