Description

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup warm water
  • 1/2 pound ground pork (preferably fatty)
  • 1 tablespoon grated fresh ginger
  • 2 green onions, finely chopped
  • 2 cups pork stock
  • 2 tablespoons low-sodium soy sauce
  • 1 teaspoon sesame oil

Instructions

  1. In a bowl, mix flour and warm water to form a smooth dough. Knead for about five minutes and let rest for at least 30 minutes.
  2. Simmer pork stock in a saucepan. Add soy sauce and sesame oil until slightly thickened. Let cool.
  3. Combine ground pork, ginger, green onions, and two tablespoons of cooled broth in a bowl. Season with salt and pepper.
  4. Divide rested dough into small balls and roll each into thin circles (about three inches).
  5. Place filling in the center of each wrapper and pinch edges to seal.
  6. Arrange dumplings in a steamer lined with parchment paper and steam over boiling water for about ten minutes.
