- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¾ cup granulated sugar
- 16 oz cream cheese, softened
- ½ cup sour cream
- 2 large eggs (room temperature)
- 2 tsp ground cinnamon
Instructions
- Preheat oven to 325°F (160°C). Line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar. Press into the bottom of the prepared pan.
- In another bowl, beat cream cheese until smooth. Gradually add sour cream and remaining sugar until combined. Add eggs one by one, mixing well after each addition. Stir in cinnamon.
- Pour half the cheesecake batter over the crust. Sprinkle with extra cinnamon before adding the remaining batter.
- Bake for 40-45 minutes until slightly jiggly in the center. Cool completely before refrigerating for at least two hours.
