- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup fresh blueberries (or frozen)
- 1 cup fresh strawberries
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- Mix graham cracker crumbs and melted butter in a bowl. Press into the bottom of the baking dish.
- Beat cream cheese and sugar until smooth; add eggs one at a time, mixing in vanilla until creamy.
- Mash blueberries and strawberries together in a separate bowl.
- Pour half the cheesecake mixture over the crust, then drop spoonfuls of berry mixture on top. Pour remaining cheesecake filling and swirl gently.
- Bake for 30–35 minutes until edges are set but center jiggles slightly. Cool completely before slicing.
