Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry on a floured surface until about 1/8 inch thick. Cut into squares large enough to wrap each piece of Brie.
- Place a slice of Brie in the center of each square. Top with crushed pistachios, drizzle with honey, and sprinkle fresh thyme.
- Fold the corners of the pastry over the cheese and seal tightly.
- Bake for 15-20 minutes until golden brown and puffed.
