  • 3 tbsp white miso paste
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp toasted sesame oil
  • 1 tbsp rice vinegar
  • 2 green onions, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the eggplant into ½-inch thick rounds.
  3. In a mixing bowl, whisk together the miso paste, soy sauce, honey or maple syrup, sesame oil, and rice vinegar until smooth.
  4. Arrange eggplant slices on the baking sheet and generously brush both sides with the miso glaze.
  5. Bake for 25-30 minutes until golden brown and tender, flipping halfway through.
  6. Garnish with chopped green onions before serving.
