Description

Ingredients

  • 1 cup all-purpose flour
  • 1 cup canned pumpkin puree
  • 1/2 cup granulated sugar
  • 1 tbsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • Vegetable oil (for frying)
  • 2 tbsp melted butter (for coating)

Instructions

  1. In a medium pot, combine 1 cup water, sugar, butter, salt, and baking powder. Heat until boiling.
  2. Remove from heat and mix in flour until smooth. Let cool slightly before adding pumpkin puree and eggs one at a time.
  3. Heat oil in a deep skillet to 375°F (190°C).
  4. Pipe churros into hot oil and fry for 2-3 minutes on each side until golden brown.
  5. Drain on paper towels and roll in melted butter followed by cinnamon sugar.
