- Vegetable oil (for frying)
- 2 tbsp melted butter (for coating)
Instructions
- In a medium pot, combine 1 cup water, sugar, butter, salt, and baking powder. Heat until boiling.
- Remove from heat and mix in flour until smooth. Let cool slightly before adding pumpkin puree and eggs one at a time.
- Heat oil in a deep skillet to 375°F (190°C).
- Pipe churros into hot oil and fry for 2-3 minutes on each side until golden brown.
- Drain on paper towels and roll in melted butter followed by cinnamon sugar.
