  • ½ cup cold unsalted butter, cubed
  • 46 tbsp ice water
  • 1 medium zucchini, thinly sliced
  • 1 red bell pepper, chopped
  • 1 cup cherry tomatoes, halved
  • ½ cup crumbled feta cheese
  • Fresh thyme or basil (handful)

Instructions

  1. Mix flour and cold butter in a bowl until crumbly. Gradually add ice water until the dough holds together. Chill wrapped in plastic for at least one hour.
  2. Preheat oven to 400°F (200°C). Spread zucchini, bell pepper, and tomatoes on a baking sheet; drizzle with olive oil and season with salt and pepper. Roast for about 20 minutes.
  3. On a floured surface, roll chilled dough into a circle about 12 inches wide. Transfer onto parchment paper on a baking sheet.
  4. Spread crumbled feta in the center of the dough; layer roasted veggies on top, folding edges over filling gently.
  5. Brush crust edges with beaten egg for shine. Bake for 30-35 minutes until golden brown.
