Ingredients

Scale
  • 8 oz fettuccine pasta
  • 1 lb large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/2 cup freshly squeezed lemon juice
  • 1/2 cup heavy cream
  • 4 tbsp unsalted butter
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the fettuccine according to package instructions until al dente. Drain and reserve 1 cup of pasta water.
  2. In a skillet over medium heat, melt 2 tablespoons of butter. Add minced garlic and sauté until fragrant (about 1 minute). Add shrimp and cook until pink (about 3 minutes per side). Remove shrimp from skillet.
  3. In the same skillet, add heavy cream, lemon juice, salt, and pepper. Bring to a gentle simmer while stirring.
  4. Return shrimp to the skillet along with the drained fettuccine. Toss gently to combine, adding reserved pasta water as needed for desired sauce consistency.
  5. Sprinkle with parsley and finish with an extra squeeze of lemon juice before serving.
