  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ⅓ cup granulated sugar
  • ½ cup fresh key lime juice (about 57 limes)
  • 1 can (14 oz) sweetened condensed milk
  • 2 large eggs (room temperature)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press firmly into the bottom of the prepared dish.
  3. Bake the crust for about 10 minutes until golden brown. Allow it to cool.
  4. In another bowl, whisk together key lime juice, sweetened condensed milk, and eggs until smooth.
  5. Pour the filling over the cooled crust and bake for an additional 15-20 minutes until set but slightly jiggly in the center.
  6. Cool completely at room temperature before refrigerating for at least two hours. Slice into squares and serve chilled.
