Johnny Cakes, also known as Hoecakes, are a delightful treat that combines crispy edges with a soft, fluffy center. These easy-to-make cornmeal pancakes evoke memories of family gatherings and cozy breakfasts. Serve them warm with maple syrup or experiment with savory toppings for a versatile addition to any meal.

Ingredients

Scale
  • 1 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp sugar (adjust to taste)
  • 1 cup whole milk (or almond/oat milk)
  • 3 tbsp melted butter

Instructions

  1. In a large bowl, whisk together cornmeal, flour, baking powder, salt, and sugar.
  2. In another bowl, mix milk and melted butter until blended.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  4. Preheat a nonstick skillet over medium heat. Pour about 1/4 cup of batter onto the skillet for each cake.
  5. Cook until bubbles form on top (about 2 minutes), then flip and cook for another 2 minutes until golden brown.
