  • 2 medium zucchinis, thinly sliced
  • 1 sheet puff pastry (thawed)
  • 2 tbsp extra virgin olive oil
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp fresh basil, chopped
  • 1 tbsp fresh thyme, chopped
  • 3 large eggs
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry on a floured surface to about ½ inch thickness and transfer it onto the prepared baking sheet.
  3. In a skillet, heat olive oil over medium heat and sauté the zucchini slices until tender (about 5 minutes). Season lightly with salt and pepper.
  4. Spread the sautéed zucchini evenly over the puff pastry. Sprinkle with Parmesan cheese and fresh herbs.
  5. In a bowl, whisk together eggs, salt, and pepper. Pour this mixture evenly over the tart.
  6. Bake for 25-30 minutes until golden brown. Cool slightly before slicing.
