  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
  • 3 cloves fresh garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp rice vinegar
  • 1 tsp sesame oil

Instructions

  1. Slice the chicken into bite-sized pieces for even cooking.
  2. Set the Instant Pot to sauté mode; add sesame oil, garlic, and ginger. Sauté until fragrant (about 1 minute).
  3. Add chicken pieces and stir for about 3 minutes until no longer pink.
  4. In a bowl, whisk together soy sauce, brown sugar, rice vinegar, and sesame oil. Pour over chicken.
  5. Seal the lid and pressure cook on high for 8 minutes.
  6. Release pressure carefully, stir well, and serve hot over rice or noodles.
