  • 1 lb beef tenderloin
  • 1 sheet frozen puff pastry (thawed)
  • 8 oz cremini or button mushrooms (finely chopped)
  • 2 tbsp Dijon mustard
  • 4 slices prosciutto
  • 1 tsp fresh thyme (chopped)
  • 1 egg yolk mixed with 1 tbsp water (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Sauté chopped mushrooms in a skillet over medium heat until liquid evaporates (about 10 minutes). Season with thyme, salt, and pepper; allow to cool.
  3. Generously season beef tenderloin with salt and pepper. Sear in the same skillet over high heat for about 2 minutes per side until browned. Brush with Dijon mustard.
  4. Roll out puff pastry on a floured surface. Layer prosciutto slices, mushroom filling, and seared beef at one end. Roll into a log shape and seal edges.
  5. Place each Wellington seam-side down on the prepared baking sheet. Brush with egg wash and bake for 20-25 minutes until golden brown.
  6. Let rest for five minutes before slicing into individual portions.
