Ideal for brunch gatherings or quick weeknight dinners, this frittata is not only delicious but also packed with nutrients. Enjoy it warm or store leftovers for an effortless meal prep option.

Ingredients

Scale
  • 6 large eggs
  • 1 cup fresh spinach (about 30g)
  • 1 cup cherry tomatoes, halved (about 150g)
  • 1/2 cup crumbled feta cheese (about 75g)
  • 1/4 cup fresh basil, chopped (about 10g)
  • 1/4 cup fresh parsley, chopped (about 10g)
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In an oven-safe skillet, heat olive oil over medium heat. Sauté spinach and cherry tomatoes until spinach wilts and tomatoes soften (3-4 minutes).
  3. In a bowl, whisk together eggs, salt, and pepper until frothy.
  4. Stir in feta cheese and fresh herbs into the egg mixture.
  5. Pour the egg mixture over sautéed vegetables in the skillet, gently stirring to combine. Cook on medium heat until edges start to set (about 3 minutes).
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the center is firm but springy.
  7. Serve warm, optionally alongside a light salad or toasted bread.
