- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 16 oz cream cheese, softened
- 1/2 cup sour cream
- 1 cup powdered sugar
- 2 tsp vanilla extract
- 8 oz chocolate chips
- 1/2 cup crushed Oreos (plus more for topping)
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press into the bottom of a springform pan.
- In another bowl, beat softened cream cheese until smooth. Gradually add powdered sugar, then stir in sour cream and vanilla extract until creamy.
- Fold in half of the crushed Oreos into the filling mixture. Pour over the crust.
- Bake for 50-60 minutes until set but slightly jiggly in the center. Turn off the oven and leave the cheesecake inside for an hour before cooling it completely in the refrigerator for at least four hours or overnight.
- To make ganache, heat heavy cream until simmering, pour over chocolate chips in a bowl, and stir until smooth. Spread over chilled cheesecake and top with remaining crushed Oreos.
