  • 2 tbsp fresh rosemary, finely chopped
  • 1 tsp kosher salt
  • ½ tsp freshly cracked pepper

Instructions

  1. Activate the yeast by combining warm water and yeast in a bowl; let it sit for about 5 minutes until frothy.
  2. In a large bowl, whisk together flour, salt, and pepper. Create a well in the center.
  3. Pour the yeast mixture and olive oil into the well; mix until a shaggy dough forms.
  4. Knead the dough on a floured surface for about 8 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover it, and let rise in a warm area until doubled (about 1 hour).
  6. Punch down the dough, fold in garlic and rosemary, divide into eight pieces, shape into balls, and place on a greased baking tray.
  7. Let rise again for another 30 minutes while preheating the oven to 400°F (200°C).
  8. Bake muffins for 20-25 minutes until golden brown.
