Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, ginger, cinnamon, and baking soda.
  3. In another bowl, cream the butter and brown sugar until light and fluffy.
  4. Beat in the egg yolk until well combined.
  5. Gradually mix in dry ingredients until a thick dough forms.
  6. Scoop tablespoon-sized portions, roll into balls, and place on baking sheets. Make indents in the center of each with your thumb.
  7. Fill each thumbprint with about half a teaspoon of jam or icing.
  8. Bake for 10-12 minutes until edges are golden. Cool on wire racks.
