  • 2 lbs beef chuck roast
  • 4 dried guajillo chiles
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 2 cups low-sodium beef broth
  • 2 cups sharp cheddar cheese, shredded
  • 4 slices sourdough bread
  • 2 tbsp butter

Instructions

  1. Soak dried guajillo chiles in hot water for 15 minutes until soft. Blend with onion, garlic, and beef broth until smooth.
  2. In a large pot over medium-high heat, sear the beef chuck roast on all sides until browned (about 3-4 minutes per side). Pour in the blended sauce and bring to a simmer.
  3. Cover and reduce heat to low; cook for about 3 hours until the beef is fork-tender.
  4. Shred the beef and stir back into the sauce.
  5. Butter one side of each slice of sourdough bread. On the unbuttered side, layer shredded birria beef and cheddar cheese before topping with another slice.
  6. Grill in a skillet over medium heat until golden brown (about 3 minutes per side). Serve hot with leftover birria broth for dipping.
