  • 1 cup fresh mushrooms (cremini or button), sliced
  • 3 cloves garlic, minced
  • 2 tbsp unsalted butter
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. In a skillet over medium heat, melt the butter. Add garlic and mushrooms; sauté until golden brown (about 5 minutes).
  3. Stir in cream cheese until melted, then add mozzarella, cheddar, Italian seasoning, salt, and pepper.
  4. Pat chicken dry and slice horizontally to create pockets. Season with salt and pepper.
  5. Stuff each chicken breast with the filling and secure if needed with toothpicks.
