  • 3 cups finely shredded carrots (about 6 medium carrots)
  • 1/2 cup chopped walnuts or pecans (optional)
  • For the Frosting: 8 oz cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two round cake pans and line them with parchment paper.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt until well combined.
  3. In another bowl, mix vegetable oil and eggs until blended. Gradually add this mixture to the dry ingredients, stirring until just combined. Fold in shredded carrots and nuts if using.
  4. Divide the batter evenly between the prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
