  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts (optional)
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix eggs and oil until combined. Stir in grated carrots and nuts if using.
  4. Pour wet ingredients into dry ingredients; stir gently until just combined.
  5. Fill muffin tins about two-thirds full and bake for 20-25 minutes or until a toothpick comes out clean.
  6. Allow to cool completely before frosting with cream cheese mixture.
