Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.

- In another bowl, cream softened butter with both sugars until light and fluffy. Add egg and vanilla; mix until combined.
- Gradually add the dry mixture to the wet ingredients until just combined.

- For the streusel topping, combine flour, oats, brown sugar, cinnamon, and cold butter until crumbly.
