  • 1 cup fresh blueberries (or frozen, thawed)
  • ½ cup all-purpose flour (for streusel topping)
  • ¼ cup oats
  • ¼ cup brown sugar, packed (for streusel topping)
  • ½ tsp cinnamon
  • ¼ cup cold butter, cubed

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. In another bowl, cream softened butter with both sugars until light and fluffy. Add egg and vanilla; mix until combined.
  4. Gradually add the dry mixture to the wet ingredients until just combined.
  5. Gently fold in blueberries.
  6. For the streusel topping, combine flour, oats, brown sugar, cinnamon, and cold butter until crumbly.
  7. Scoop tablespoon-sized portions of cookie dough onto baking sheets and top with streusel.
  8. Bake for 12-15 minutes until edges are golden. Cool slightly on wire racks before serving.
