  • 1 lb boneless skinless chicken breast (or 14 oz firm tofu)
  • 1 cup bell peppers (mixed colors, sliced)
  • 1 cup broccoli florets
  • 1 cup carrots (thinly sliced)
  • 2 green onions (chopped)
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tsp fresh ginger (minced)
  • 2 tbsp vegetable oil (for cooking)

Instructions

  1. Chop all vegetables into bite-sized pieces.
  2. Preheat the Blackstone griddle on medium-high heat for about five minutes.
  3. Add vegetable oil to the griddle and cook the chicken or tofu until golden brown—about 4 minutes for chicken or 5 minutes for tofu.
  4. Push the protein aside and add the chopped vegetables to the griddle. Stir frequently for about five minutes until tender yet still crisp.
  5. In a small bowl, mix soy sauce, sesame oil, and ginger. Pour this mixture over the stir fry and let it bubble for one minute.
  6. Serve immediately, optionally drizzling with extra soy sauce.
