- 1 lb beef chuck, cut into bite-sized pieces
- 1 cup plain yogurt
- 2 cups basmati rice
- 2 medium onions, thinly sliced
- 4 cloves garlic, minced
- 1 inch ginger, minced
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 4 cardamom pods
- 1 pinch saffron strands
- Salt and pepper to taste
- 3 tbsp oil for cooking
- Fresh cilantro leaves (for garnish)
- Fresh mint leaves (for garnish)
- Crispy fried onions (for topping)
Instructions
- Marinate the beef with yogurt, garlic, ginger, cumin, coriander, salt, and pepper for at least 1 hour.
- Heat oil in a large pot over medium heat. Sauté onions until golden brown (about 15 minutes).
- Add marinated beef to the pot and cook for about 5 minutes.
- Rinse basmati rice under cold water until clear. Layer half of the rice over the beef.
- Sprinkle cardamom pods and saffron soaked in warm milk over the rice.
- Add the remaining rice on top and pour enough water to cover by an inch. Cover tightly and cook on low heat for 30–40 minutes.
- Serve hot garnished with cilantro, mint leaves, and crispy fried onions.
