  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 cup apple cider
  • 2 large eggs
  • 1 stick unsalted butter (room temperature)
  • 2 cups brown sugar
  • 0.5 tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, sugar, and cinnamon.
  3. In another bowl, mix eggs and apple cider until combined. Add to dry ingredients and stir gently until just mixed.
  4. Fill cupcake liners two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
  5. While cooling, beat butter until fluffy. Gradually add brown sugar and cinnamon; mix well.
  6. Once cooled completely, frost each cupcake generously.
