  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/3 cup granulated sugar (for the crust)
  • 8 oz cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 cup granulated sugar (for the filling)
  • 1 tsp vanilla extract
  • 1 cup fresh raspberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a medium bowl, mix graham cracker crumbs, melted butter, and 1/3 cup sugar until combined. Press firmly into the bottom of the prepared dish for the crust.
  3. In another bowl, beat softened cream cheese until smooth. Add sour cream, 1/4 cup sugar, and vanilla; mix until silky.
  4. Gently fold in fresh raspberries without smashing them.
  5. Pour cheesecake mixture over the crust and bake for about 30-35 minutes until set but slightly jiggly in the center.
  6. Allow to cool at room temperature before refrigerating for at least two hours. Cut into squares and serve chilled.
