Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a medium bowl, mix graham cracker crumbs, melted butter, and 1/3 cup sugar until combined. Press firmly into the bottom of the prepared dish for the crust.
- In another bowl, beat softened cream cheese until smooth. Add sour cream, 1/4 cup sugar, and vanilla; mix until silky.
- Gently fold in fresh raspberries without smashing them.
- Pour cheesecake mixture over the crust and bake for about 30-35 minutes until set but slightly jiggly in the center.
- Allow to cool at room temperature before refrigerating for at least two hours. Cut into squares and serve chilled.
