  • 4 slices of Canadian bacon
  • 4 large eggs

  • 2 egg yolks
  • 1 tablespoon water
  • 1 teaspoon freshly squeezed lemon juice
  • 1 teaspoon Dijon mustard
  • Salt, to taste
  • Splash of vinegar (for poaching)

Instructions

  1. Toast the English muffins until golden brown.
  2. In a skillet, cook Canadian bacon over medium heat for about 3-4 minutes per side until crispy.
  3. For hollandaise sauce, melt butter in a saucepan. Whisk egg yolks and water in a heatproof bowl, then place over simmering water. Slowly whisk in melted butter until thickened. Add lemon juice, mustard, and salt; mix well.
  4. Bring a saucepan of water to a gentle boil and add vinegar. Crack eggs into small bowls and gently slide them into the water. Poach for about 3 minutes until the whites are set.
  5. Assemble by layering each muffin half with bacon, followed by poached eggs and drizzling with hollandaise sauce.
