- 2 cups cooked lobster meat
- 4 tablespoons unsalted butter
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1 cup diced carrots
- 1 cup chopped celery
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 1 teaspoon dried thyme
- 2 tablespoons lemon juice
- 2 sheets puff pastry
Instructions
- Preheat your oven to 400°F (200°C). If using frozen lobster, thaw and cut it into bite-sized pieces.
- In a skillet over medium heat, melt the butter. Sauté onions, carrots, and celery until tender, about 5 minutes.
- Add garlic and cook for another minute. Stir in heavy cream and chicken broth until well combined.
- Mix in thyme and lemon juice; fold in the lobster meat and simmer for about 5 minutes.
- Pour the filling into a greased pie dish lined with one sheet of puff pastry. Cover with another sheet, seal edges, and cut slits on top for steam release.
- Bake for 25–30 minutes or until golden brown.
