  • 2 cups cooked lobster meat
  • 4 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup diced carrots
  • 1 cup chopped celery
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 2 tablespoons lemon juice
  • 2 sheets puff pastry

Instructions

  1. Preheat your oven to 400°F (200°C). If using frozen lobster, thaw and cut it into bite-sized pieces.
  2. In a skillet over medium heat, melt the butter. Sauté onions, carrots, and celery until tender, about 5 minutes.
  3. Add garlic and cook for another minute. Stir in heavy cream and chicken broth until well combined.
  4. Mix in thyme and lemon juice; fold in the lobster meat and simmer for about 5 minutes.
  5. Pour the filling into a greased pie dish lined with one sheet of puff pastry. Cover with another sheet, seal edges, and cut slits on top for steam release.
  6. Bake for 25–30 minutes or until golden brown.
