Description

Delicious Birria Nachos are a mouthwatering fusion of crispy tortilla chips, tender birria beef, and gooey melted cheese, topped with fresh pico de gallo and a drizzle of savory consommé. Perfect for parties, game nights, or indulgent weeknight dinners, these nachos elevate any gathering into a flavorful celebration.

  • 1 lb beef chuck roast
  • 8 oz thick-cut tortilla chips
  • 1 cup Oaxaca cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 1 cup pico de gallo (fresh tomatoes, onions, cilantro, lime juice)
  • ½ cup sour cream
  • 2 cups birria consommé (from cooking the meat)

Instructions

  1. 1. Season the beef chuck roast with salt and pepper. In a large pot, sear the meat on all sides until browned.
  2. 2. Remove the meat and sauté chopped onions and garlic in the same pot until fragrant. Add spices (cumin, oregano, chili powder) and sauté briefly.
  3. 3. Return the beef to the pot with diced tomatoes and enough water or broth to cover. Simmer on low for about two hours until tender.
  4. 4. Shred the cooked beef in its broth for maximum flavor.
  5. 5. Preheat the oven to 375°F (190°C). Spread tortilla chips on a baking sheet; layer with shredded beef and cheese. Bake for 8 minutes until bubbly.
  6. 6. Drizzle warm birria consommé over nachos and top with pico de gallo and sour cream before serving.
