- 1 lb beef chuck roast
- 8 oz thick-cut tortilla chips
- 1 cup Oaxaca cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- 1 cup pico de gallo (fresh tomatoes, onions, cilantro, lime juice)
- ½ cup sour cream
- 2 cups birria consommé (from cooking the meat)
Instructions
- 1. Season the beef chuck roast with salt and pepper. In a large pot, sear the meat on all sides until browned.
- 2. Remove the meat and sauté chopped onions and garlic in the same pot until fragrant. Add spices (cumin, oregano, chili powder) and sauté briefly.
- 3. Return the beef to the pot with diced tomatoes and enough water or broth to cover. Simmer on low for about two hours until tender.
- 4. Shred the cooked beef in its broth for maximum flavor.
- 5. Preheat the oven to 375°F (190°C). Spread tortilla chips on a baking sheet; layer with shredded beef and cheese. Bake for 8 minutes until bubbly.
- 6. Drizzle warm birria consommé over nachos and top with pico de gallo and sour cream before serving.
