  • 8 oz cremini or button mushrooms, sliced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Gather and chop all vegetables: carrots, celery, onion, and garlic.
  2. In a large pot over medium heat, drizzle olive oil. Sauté onions and garlic until translucent (about 5 minutes).
  3. Add chopped carrots and celery; cook until softened.
  4. Stir in sliced mushrooms; cook until they release moisture (about 5 minutes).
  5. Pour in vegetable broth and diced tomatoes with rinsed lentils; stir well.
  6. Season with thyme, bay leaf, paprika, salt, and pepper. Bring to a boil then reduce heat to simmer for about 30 minutes until lentils are tender.
  7. Adjust seasoning as needed before serving; remove bay leaf.
