  • 4 ears fresh sweet corn
  • 1 small red onion, finely chopped
  • 1/2 cup fresh cilantro, chopped
  • 2 tbsp freshly squeezed lime juice
  • 1/2 cup mayonnaise (or Greek yogurt)
  • 1/2 cup crumbled queso fresco
  • 1 tsp chili powder

Instructions

  1. Shuck the corn and remove silk. Grill or boil for 5-7 minutes until tender.
  2. Allow corn to cool, then cut kernels off the cobs.
  3. In a large bowl, combine corn, red onion, cilantro, lime juice, mayonnaise, chili powder, and queso fresco. Mix gently.
  4. Taste and adjust seasoning with salt or additional lime juice as needed.
  5. Refrigerate for at least 30 minutes to meld flavors.
  6. Serve chilled with extra queso fresco on top.
