Ingredients

  • 4 cups kale leaves, torn into pieces (about 200g)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 2 tbsp orange juice
  • 1/4 cup green tahini (60g)
  • 2 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C) or prepare your grill.
  2. Wash and dry the kale thoroughly; tear it into bite-sized pieces.
  3. In a large bowl, toss the kale with olive oil, salt, and pepper until well-coated.
  4. Spread the kale on a baking sheet in an even layer; roast for 10-15 minutes until edges are charred.
  5. Meanwhile, whisk together green tahini, lemon juice, orange juice, minced garlic, salt, and pepper in a separate bowl.
